Jorge Vallejo of Quintonil in Mexico City and Daniela Soto‑Innes of Rubra in Punta de Mita unite for an evening devoted to modern Mexican cuisine. Drawing from shared heritage and contemporary technique, the chefs collaborate on a five‑course menu that balances tradition with innovation, weaving together two of Mexico’s most influential culinary voices.

Elevating the experience, bespoke pairings are crafted by Handshake Speakeasy, ranked the No. 1 bar in the world in 2024 and No. 2 in 2025 by The World’s 50 Best Bars, whose team brings a precise, expressive, and boundary‑pushing approach to cocktail creation.

Adding a musical dimension to the night, Pahua—the Mexican singer, producer, and DJ known for blending electronic textures with Latin rhythms—creates an atmospheric soundtrack deepening the dialogue between flavor, emotion, and cultural expression.

Late Night Latin Grooves by Sotomayor

For one night only, the Mezcal bar hosts a rare collaboration as Handshake Speakeasy—ranked the No. 1 bar in the world (2024, No. 2 in 2025)—joins Tlecān (No. 23 in 2025) and Licorería Limantour (No. 52 in 2025 in the world) behind the counter for an exclusive bar‑team takeover with the Mezcal bartenders. Together, they bring some of the most influential techniques and philosophies shaping modern cocktail culture.

Soundtracking the night is Sotomayor, the Mexico City electronic duo blending Afro‑Latin percussion with contemporary beats. Their warm, kinetic rhythms set an immersive atmosphere that evolves as the evening deepens.
